I love dessert just as much as the next person. This is why I felt I need to take on the job of attempting to find healthy versions of every favorite dessert that I can. This is my best creating thus far, and I will share it with everyone else 🙂
For the Base:
1 Cup Dessicated Coconut
1 Cup Almonds
1 Cup Cashews
1 Cup Pitted Dates
Put all ingredients in a food processor until stuck together. Press to the bottom of a Pie Pan and freeze overnight.
For the New York Cheesecake Topping:
1/2 Cup Plain Greek Yogurt
1/2 Cup Low Fat Cream Cheese
1/2 Scoop Vanilla Whey Protein
1 tbsp Vanilla Extract
1 tbsp Honey, Agave Nectar, Maple Syurp, VitaFibre Syurp, etc.
Blend together until mixed and creamy in a food processor. Spread evenly on top of Base. Freeze for at least 2 hours. Serve chilled.
For toppings: I blended mixed berries with some water and maple syurp, and spread on top.
