Chocolate Peanut Butter Ice Cream Sandwiches


Gluten Free, Sugar Free, Oil free Chocolate Peanut Butter Ice Cream Sandwiches

Step Back Ben & Jerry’s, you have some new competition 😉

  • 220g Gluten Free Rolled oats
  • 1/2 tsp Salt
  • 150g Walden Farms Maple Syrup
  • 125g Peanut Butter
  • 1 tbsp Water
  • 1 tsp  Pure Vanilla Extract
  • 4 oz Dark Chocolate Chips
  • 125 g Peanut Butter

Instructions:

  1. Melt first 125 g peanut butter in the microwave
  2. Combine rolled oats, salt and date nectar with peanut butter and mix thorougly
  3. Press 1/2 of the mixture into 8×8 baking tray or glass dish and freeze for 30 minutes
  4. Melt Dark Chocolate Chips and remaining peanut butter in the microwave for 2 minutes (or until melted), stirring every 30 seconds
  5. Combine in water and vanilla extract
  6. Layer 1/2 mixture on top of oat mixture
  7. Freeze for a further 30 minutes
  8. Top with remaining oat mixture
  9. Drizzle remaining 1/2 chocolate/peanut butter mixture
  10. Freeze for another 30 minutes
  11. Bon Appetite!
