40 Minute Easy Protein Lemon Cheesecake

Ingredients (Serves 8):


Base:

2 Efectiv Dual Lemon Cheesecake Protein Bars

50g Alpro Almond Yogurt

1 egg

 

Filling:

7oz Cream Cheese (I used Lactofree)

1 scoop Efectiv Vanilla Cream whey protein

1 egg

1 tsp baking powder

1 tsp vanilla extract

1 lemon (juice and zest, separated)

4 packets stevia or other sweetener

 

Recipe:

  1. Preheat oven to 190 degrees
  2. Grease a pie tin with no-calorie cooking spray
  3. For the base, in a food processor, mix all ingredients until a crumbly crust have formed
  4. Compact the base ingredients into the tin
  5. Bake for 10 minutes while preparing the filling
  6. In a food processor, mix all ingredients for the filling (excluding zest)
  7. After blended smooth, mix in lemon zest
  8. Remove base from the oven, and allow to cool for 5 minutes, while cooling the filling in the refrigerator
  9. Top cheesecake base with filling until smooth
  10. Bake for 30 minutes
  11. Garnish with more zest, coolwhip, icecream, etc (optional)

 

Calories per serving: 165kcal, Protein: 7g, Carbs: 3.7g, Fats: 13g
